Ingredients
1/3 powdered sugar
1 cup (2 sticks) margarine or butter, softened
1 teaspoon vanilla extract
3/4 teaspoon almond extract
1 small package pistachio pudding
1 egg
2 cups unbleached flour
1/2 cup chocolate chips
Filling:
1 1/2 cups powdered sugar
1 to 3 teaspoons milk
3 to 5 drops of red or green food coloring
Directions
Preheat oven to 350 degrees.
In a large bowl, cream 1/3 cup powdered sugar, butter, vanilla and almond extract, pudding mix, and egg in a bowl until well blended.
Lightly spoon flour into measuring cup, slowly stir in flour, by hand.
Add chocolate chips and stir until well blended.
Shape into 1-inch balls and place 2 inches apart on lightly greased cookie sheet.
With thumb make imprint in center of each cookie.
Bake for 10 to 14 minutes until edges are light brown.
Let cool completely.
In a smaller bowl combine all filling ingredients until smooth and place a very scant teaspoon of this filling onto the center of each cookie.

I have been making these cookies since I first found them here about 5 years ago, and I love them!!! I add a little rum extract and don't do any filling.
