Ingredients
175g plain flour
50g soft margarine or butter
1 tsp ginger
1/2 tsp cinnamon
1/2 tsp baking soda
75g light brown sugar
2 Tbsp golden syrup
1/2 egg
For the icing:
100g confectioner's sugar
2 Tbsp water
food colouring (any)
optional decorations: sprinkles, candy, etc.
Directions
In a mixing bowl, sift the flour, ginger, cinnamon and baking soda together.
Add the margarine and mix until it looks like breadcrumbs. Then add the sugar and syrup, but do not mix.
Crack the egg into a small bowl and beat with a fork. Add 2 tablespoons of beaten egg and add to the "breadcrumb" mixture. Mix with a knife until it forms a dough. If it is not making a dough add another 1/2 tablespoon of egg.
Once it has made a dough, set it aside and wash up.
Roll out the dough on a floured surface until it is quite thin but not really thin.
Cut out in the shapes of stars.
Using a piece of kitchen towel, put some butter on the towel and rub all over the tray as this will make it very easy to take the cookies off the tray after you bake them.
Bake for 10–15 minutes or until golden brown and a little squishy.
Place onto a cooling rack.
Making the icing and decorating:
In a regular eating bowl sift the confectioner's sugar and add 2 tablespoons of water and mix. If this still seems not to be working add another tablespoon until it makes plain icing.
Add a few squirts of your chosen food colouring and stir until it makes your colour.
Take a palette knife or regular knife and add icing to your cookies.
Place any decorations on that you have.
