Ingredients
85g/3 ounces butter
100g/4 ounces caster sugar
1 egg, beaten
5ml vanilla extract
10ml mixed spice
40ml golden syrup
250g/9 ounces plain flour
2.5g baking powder
icing sugar or granulated sugar to decorate
Directions
When ready to bake, preheat oven to 180 degrees C/gas 4.
Beat together the butter and sugar until they turn pale yellow, about 3-5 minutes with an electric mixer.
Add the egg slowly, beating until well combined, stir in the vanilla, spice, golden syrup, flour and baking powder.
If it is very sticky, add a little more flour.
Shape into a flat disc, wrap in cling film and chill in the fridge for about an hour.
Grease a couple of flat baking sheets.
Roll out half the biscuit mixture on a floured board so it is 4mm/1/4in thick and cut out 12 Christmas trees using a 7.5/3in Christmas tree cookie cutter.
Repeat with the remaining dough.
Place on a baking sheet and bake for 10 minutes until just golden around the edges.
To decorate, either scatter with granulated sugar before baking or dust with icing sugar when cooled.
