Ingredients
1 cup peanut butter
1 cup sugar
1 egg
Directions
Preheat the oven to 350 degrees F.
Prepare a cookie sheet by covering with foil.
Mix together the sugar, peanut butter, and egg, in that order.
Scoop spoonfuls of the dough and put them about an inch apart on the foil-covered cookie sheet. Then, take a fork and press down each cookie, crisscrossed.
Bake in the oven for 7 minutes, or until golden-brown.

First I should mention a trick to cooking these. Leave them on the pan when you pull them out of the oven. They need a little time to cool off and firm up. This was my Grandfathers favorite Peanut Butter Cookie. I give these to my friends who need goodies that are gluten free. Very rich cookie. Easy one for children. James Wallace Douglas
