Ingredients

1 package (3 ounce) cream cheese, softened
1/2 butter or margarine, softened
1 cup all-purpose flour
1 large egg
3/4 cup packed brown sugar
1 tablespoon butter or margarine, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup chopped pecans

Directions

  1. When ready to bake, preheat oven to 325 degrees.


Crust:

  1. Blend softened cream cheese and 1/2 cup butter or margarine. Stir in flour just until blended. Chill about 1 hour. (You can make this ahead and chill it for up to 24 hours.)

  2. Shape dough into 24 one-inch balls and press into ungreased 1 1/2 inch muffin cups (mini-muffin size) to make a shallow shell.


Filling:

  1. Beat egg, brown sugar, 1 tablespoon butter or margarine, vanilla and salt.

  2. Sprinkle 1/2 cup pecans on dough in muffin tins. Add egg mixture and sprinkle with remaining pecans.

  3. Bake 20 to 25 minutes or until set.

  4. Cool in pans on wire rack.
