Ingredients
1 cup (2 sticks) butter
1/2 cup powdered sugar
2 cups all-purpose flour
4 eggs, well beaten
1/2 teaspoon salt
2 cups sugar
8 tablespoons lemon juice
1/2 tablespoon grated lemon rind
4 tablespoons flour
1 tablespoon baking powder
powdered sugar
Directions
Preheat oven to 350 degrees.
Cream first three ingredients together and spread evenly in an ungreased jelly roll pan, pat down.
Bake for 15 minutes, until lightly brown.
Reduce oven to 325 degrees.
Beat eggs, mix with remaining ingredients, pour over baked pastry.
Bake an additional 30 minutes.
Sprinkle with powdered sugar.
Cool for 15 minutes then cut into bars.
Store in refrigerator.
