Ingredients
2 eggs
1 cup Smucker's smooth gluten-free peanut butter
1 teaspoon Clabber Girl or Arm and Hammer baking soda
1 cup Domino's granulated sugar
1/2 cup Domino's light brown sugar
3 tablespoons softened Vegan Earth balance butter stick
1/8 teaspoon sea salt
1 cup King Arthur Gluten Free measure for measure flour
Directions
Preheat the oven to 300 degrees. I bake my gluten-free goods on 300 degrees so they don't get too dark.
You will need to drain the oil off the top of the peanut butter as much as you can.
In a mixing bowl add first seven ingredients and mix. Add the flour all at onceand mix, scraping the bowl.
Spray a cookie sheet lightly with Pam nonstick cooking spray (original only). Do not use the Baker's Joy nonstick cooking spray that does contain gluten. I only stick with Pam nonstick cooking spray, as I know it's safe.
Roll the cookie dough into balls as big as a walnut shell. Place on the cookie sheet, then take a fork and press lightly on the cookie until you see fork marks.
Place cookies in oven and bake for 20 minutes.
